Ingredients
- 4 ounces (about 110 grams) somyeon (thin wheat noodles)
- 1 garlic clove, minced
- 2 tablespoons gochujang (Korean fermented hot pepper paste)
- 1-2 tablespoon red chili powder
- 1 teaspoon sugar (optional)
- 1 tablespoon toasted sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame seeds, ground
- 1 small red onion, thinly sliced
- 1 small carrot, julienned
- 1 a boiled egg (or hard-boiled egg)
- 1 small cucumber, julienned
- black pepper to taste
- Chopped green onions and toasted sesame seeds for garnish
Instructions:
- Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
- In a small bowl, mix together soy sauce, rice vinegar, brown sugar, sesame oil, garlic, chili powder, and black pepper to make the dressing. Set aside.
- In a large mixing bowl, combine the cooked noodles, julienned carrots, thinly sliced red onion, and julienned cucumber.
- Pour the dressing over the noodles and vegetables.
