Ingredients:
- 2 pounds of pork belly, skin-on
- 2 cups of water
- 1 cup of soy sauce ,3 bay leaves
- 1 cup of rice wine or dry sherry
- 1 cup of brown sugar
- 1 onion, chopped
- 1 head of garlic, peeled and chopped
- 2 teaspoons of ginger, grated
- 1 tablespoon of black pepper
- 4-5 green onions, chopped
- Lettuce leaves, washed and drained
- Ssamjang (Korean dipping sauce made of fermented bean paste, chili paste, and other ingredients)
Instructions:
- Rinse the pork belly under cold water and pat it dry with paper towels.
- In a large pot or Dutch oven, combine the water, soy sauce, rice wine, brown sugar, onion, garlic, ginger, and black pepper. Stir well and bring to a boil over high heat.
- Add the pork belly to the pot, skin side up, and reduce the heat to medium-low. Cover the pot with a lid and simmer for 1 to 1 1/2 hours, or until the pork is tender and fully cooked.
