Kale Stir Fried Rice

Ingredients:

  • 2 cups of cooked rice (preferably leftover rice)
  • 1 pound of beef, sliced thinly
  • 1 bunch of kale, chopped
  • 1 cup of Shiitake mushrooms, sliced
  • 1 bunch of bok choy, chopped
  • 1 cup of Mungbean sprouts
  • 3 cloves of garlic, minced
  • 1 onion, chopped
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of sesame oil
  • Salt and pepper, to taste
  • Vegetable oil for frying

Instructions:

  1. Heat up a wok or large frying pan on medium-high heat. Add some vegetable oil and swirl it around the pan.
  2. Add the sliced beef to the pan and stir-fry for a few minutes until it starts to brown. Remove the beef from the pan and set it aside.
  3. In the same pan, add some more oil if needed and stir-fry the garlic and onion until fragrant.
  4. Add the sliced Shiitake mushrooms and stir-fry for a few minutes until they start to soften.
  5. Add the chopped kale and bok choy to the pan and stir-fry for a few minutes until they start to wilt.
  6. Add the cooked rice to the pan and stir-fry everything together for a few minutes.
  7. Add the soy sauce, oyster sauce, and sesame oil to the pan and stir-fry for a few more minutes.
  8. Add the beef back to the pan along with the Mungbean sprouts and stir-fry everything together for a few more minutes.
  9. Season with salt and pepper to taste.
